Anyone that follows me on social media will know that I love to bake. I have a whole backlog of recipes I need to get around to typing up for Chocolate Dipped Cookies and so many chocolate tiffins that it will take me a while to get them all online but one baking experience I had to share was a new TripleChocolate Truffle Cookies experiment I had with some help from Dr. Oetker.

What can you use Dr. Oetker products for?

Dr. Oetker got in touch to see if they could inspire me to get creative in the kitchen and as a starting point I had a look at their recipes and the Dr Oetker products online. My favourite was instantly the Chocolate Truffle Cookies but as we’d been sent a few varieties of Dr. Oetker chocolate to try I thought I’d add even more chocolate to the recipe and make TripleChocolate Cookies. After all, you can never have enough chocolate! I also didn’t have any dark brown sugar so used light brown sugar instead – the finished cookies were, I’m sure, just as good!

I had never cooked cookies before that you dunked in icing sugar before baking. This little twist really adds something to the cookies and I’ll definitely be doing it with other cookie recipes in the future. Dr. Oetker has so many ideas, recipes and baking products to help everyone bake – even people who have never baked before so if you’re looking to get into the kitchen Dr. Oetker home baking range and website is a really great place to start.

I have tried to take a leaf out of my friend Lucy’s book and share most of the things I bake so that I’m not eating the majority of it myself. This time I shared these fancy chocolate cookies with Dave and the children as well as friends who came around for play dates – play dates are so much better when you have home baked chocolate cookies to keep you company!

What equipment do you need for this cookie recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already – that is what makes flapjacks so simple and convenient to make.

So here’s our Triple Chocolate Truffle Cookies Recipe:

Ingredients

  • 230 g dark chocolate or dark chocolate chips
  • 130gbutter
  • 2eggs
  • 200glight brown sugar
  • 2tspvanilla extract
  • 250gplain flour
  • 2tspbaking powder
  • 70gmilk chocolate cut into chunks
  • 70gwhite chocolate cut into chunks
  • 90gicing sugar

Instructions

  • Break the dark chocolate into pieces and melt in a bowl with the butter over a saucepan of water until melted and combined. Remove the bowl from the heat and set aside to cool for 10 minutes.
  • Put the egg, brown sugar and vanilla in a bowl and mix before beating in the melted chocolate mixture. Add the flour, baking powder and chocolate chunks, mixing well. Cover and chill for 1 hour until firm.
  • When ready to cook, preheat oven to 180C/ Gas 4). Line 2 large baking trays with baking paper or parchment paper. Sift the icing sugar into a small bowl.
  • Using an ice cream scoop or a rounded dessert spoon, take a scoop of the chocolate mixture and press the rounded side down in the icing sugar to give it a sugar crust.
  • Arrange the sugared scoops on the baking sheets, leaving room to spread. Bake for 15 minutes until risen, cracked, and just firm – the centre should remain soft. Leave to cool completely on the trays. Delicious served warm or cold.
